Esri released a new ArcGIS Online update in October 2023. You can read their blog about the update here. Below is a quick summary of the updates I found to be the most pertinent:
General
A new date field can be added to hosted feature layers, allowing date values to be saved without a timestamp (view the blog post here).
Web Maps
Chart elements in Popups now support custom color schemes.
Custom group layers created in the Web Map Viewer can be saved as new items and used in other maps and applications.
Web Maps configured in the Map Viewer now allow for the assignment of a time zone.
Editing related records participating in a Feature-to-Feature relationship is now allowed in the Edit widget. (Previously only Feature-to-table relationships were supported for editing).
Instant Apps
The Attachment Viewer Instant App now supports attribute filtering.
The Nearby Instant App now uses the current map extent as the default search area.
There is a new Manager Instant App that can act as a single app to review and modify editable layers in many web maps.
Dashboards
Map widgets can now be created from Web Scenes
Filters in Widgets now support filtering by items containing multiple values.
This is helpful for comma-separated attributes like those generated by a Select Multiple question in Survey123.
Selections in a Map widget can now be done using lasso, circle, and line tools
Experience Builder
There is a new Analysis widget allowing users the ability to do Map Viewer Analysis function.
The Edit widget now supports editing related tables.
The Table widget now allows you to set filters at runtime with the SQL expression builder.
Field Maps
Field Maps now supports a range domain for numeric form elements
